White Sturgeon is America's answer to the great Caspian caviars: Acipenser transmontanus, farmed responsibly in the USA. The roe is fine and distinguishable, with a slightly firm texture that opens into a buttery, nutty flavor with a clean brine finish. Frequently compared to wild Caspian Ossetra. Consistently extraordinary, and completely domestic.
