Imperial Ossetra

Harvested from Acipenser gueldenstaedtii and selected from just 5–7% of the annual yield, Imperial Ossetra is the top of what this species can produce. The beads run slightly larger than our Ossetra, lightly golden in color, firm, and noticeably juicy. The flavor is bold but clean: deeply nutty, unmistakably buttery, with a long finish that doesn't overstay. Milder in salinity than Beluga. More complex than anything that didn't earn the Imperial grade.
