Kaluga

Kaluga is a hybrid, Huso dauricus crossed with Acipenser schrenckii, raised in the cold, clean waters of China's Thousand Island Lake. The beads are large, firm, and unmistakably present: a slow, sweet build with hazelnut notes and a buttery finish that earns the Beluga comparison every time. If you're graduating from Ossetra, this is the move.
