Paddlefish

Paddlefish Roe, also known as Spoonbill, is American through and through, farmed from Polyodon spathula in the USA. The color ranges from pale silver to deep steely gray, and the flavor is rich and earthy with a smooth, buttery finish that surprises people expecting more. Soft in texture and big in personality, this is the ideal entry point for anyone new to roe, and a weeknight staple for everyone else.
